DescriptionGlycerol, also known as glycerin or fumarate, belongs to the class of organic compounds known as sugar alcohols. These are hydrogenated forms of carbohydrate in which the carbonyl group (aldehyde or ketone, reducing sugar) has been reduced to a primary or secondary hydroxyl group. Glycerol is an extremely weak basic (essentially neutral) compound (based on its pKa). Glycerol exists in all living species, ranging from bacteria to humans. In humans, glycerol is involved in phospholipid biosynthesis. Glycerol is an odorless tasting compound. Outside of the human body, Glycerol is found, on average, in the highest concentration within pomegranates. Glycerol has also been detected, but not quantified in, several different foods, such as soursops, jicama, european plums, saffrons, and mixed nuts. This could make glycerol a potential biomarker for the consumption of these foods. Glycerol is a potentially toxic compound.
